This rating falls within the optimum use category of the Rockwell scale of hardness for chinese cleaver. The 7Cr17Mov Stainless steel used has been meticulously developed for durability, reliability, edge retention, and of course RAZOR sharp. The blade face forged through wire drawing which can reduce friction, easy to clean.
